Tips for Kitchen Measurements

For baking, use weight measurements when possible. A kitchen scale measuring in grams is more accurate than volume cups for flour, sugar, and butter. Flour can vary 20% in weight per cup depending on how it is scooped.

Level dry measurements. When measuring flour or sugar with a cup, level the top with a straight edge. Heaping cups can add 20-30% more ingredient.
